Veggie Quesadilla

Ingredients List

  • 1 package Maria & Ricardo Sprouted Grain Tortillas
  • 1 medium zucchini, quartered the long way then sliced 3/8” thick
  • 1 large red pepper, seeded, quartered and sliced 3/8” thick
  • 1 large yellow pepper, seeded, quartered and sliced 3/8” thick
  • 1 medium red onion, peeled, halved and sliced 3/8” thick
  • 3 tablespoons avocado oil, divided
  • Salt & Pepper, to taste
  • 1 pint prepared guacamole
  • 6 ounces prepared salsa
  • 1 lime, cut into 6 wedges

Directions

  1. Place zucchini, peppers and onions in 2 tablespoons of avocado oil, add salt & pepper in a bowl and toss until veggies are evenly coated
  2. Place veggies on a flat baking sheet and broil on high for 3-5 minutes until they begin to get tender and lightly browned. Reserve in a warm place
  3. Pre heat griddle or large pan on medium-high. Lightly brush tortillas with remaining avocado oil and grill until “toast spots” develop, approximately 2 minutes
  4. Assemble quesadillas by smearing with a spoonful of guacamole and top with warm roasted veggies. Fold in half, cut and serve with salsa and fresh lime wedges
